I'm not sure of the recipe, but I love Coco Roco's quinoa fried rice.

Take that couscous and check food.com for a recipe for Tabouleh (adding fresh herbs, diced tomatoes, fresh lemon juice etc.).
Then similarly find a good recipe for a fresh Gazpacho soup (fresh tomatoes and chopped leafy herbs blended and served chilled)and you'll have a helluva meal to beat the heat.

Tabouleh! Shoot I never even thought of that! How simple and perfect.. of course now I want grilled chicken, pita and tzatziki.. but I can make this work.

On medium-low heat sauté carrots, celery, and any other veggies you like. Use olive oil (and cook in a pot). Sauté for just 5 minutes (or even a bit less). Add garlic and cook an additional 30 second s or so. Remove veggies to a bowl. In the same pot, put up quinoa with some chicken stock (or water, if you prefer). When liquid is about half absorbed (about 10 minutes), throw in sauted veggies and finish cooking quinoa. Dish should take less than 30 minute to prepare. You can also throw in some herbs, like bay leaf, for additional flavor.

ps I make quinoa salad all summer, w basil and mint and whatever + oil/vinegar salad dressing or toasted sesame dressing.
I like Israeli couscous toasted in the pan, hydrated w broth, mixed w veg and fresh tarragon. -

My FAVORITE summer salad :
Black Bean Quinoa Salad
1/2 cup quinoa
1 cup water
Cook quinoa for 10-15 minutes until water is absorbed. Cool quinoa.
1 can black beans, rinsed
1 1/2 cups cherry tomatoes, cut inhalf
5 green onions, finely chopped
1/4 cup fresh cilantro
Mix these ingredients together, add the quinoa once it is cooled
Dressing:
1/4 cup olive oil
juice of 2 fresh limes (make sure you use fresh limes, it's much better)
1 tsp cumin
1/2 tsp. red pepper flakes
Mix dressing into salad, add the cilantro stir and chill.
Salt & pepper to taste -
We usually have fresh greens with chunks of avocado, halved grape tomatoes (or chunked regular-size tomatoes), pumpkin seeds, and a dressing made from olive oil, unfiltered apple cider vinegar, fresh pressed garlic (mashed in a mortar), and grainy mustard. Totally fresh and delicious.
Chilled white wine goes well with this weather too--check out Soave (available at Sip in the north end of Park Slope). Cheap and delicious.
