How can I learn to cook good caribbean and soul foods?
I am an African-american lady living in Brooklyn and I love to eat out. I realize there are some great West-indian and soul foods restaurants in Brooklyn. However, I would like to learn secrets tips from experienced cooks on how I can learn to prepare them myself at home. I have tons of cookbooks with recipes but I need an instructional method of learning also. I need to learn from scratch. How can I learn how to cook well? Any recommended ingredient to try? Any suggestions?

I cook West Indian Creole food but fish and vegetables only no birds or meat. What exactly do you want to learn to cook? I do everything from scratch. I learned from my grandmother.

I'm actually in contact w/ my aunt for a couple of her recipes, including the curry goat recipe I love. once I get them, I'll share.

my aunt's recipe:
Curry Goat or Curry Anything
1.Heat vegetable oil in a skillet.
2.Add salt, pepper, 1/4 teaspoon or so of garem masala if you can get and I am sure you can in NYC. (1/4 t. of Garem Masala for each 2 Tablespoons of Curry Powder)
3.Add several tablespoons of whatever kind or mixture of curry powders you like. (I always used about half mild and half hot, you just need to fiddle with this until you get it how you like it)
4.Stir this all up in the hot oil in the skillet for a few minutes. Don't let it burn.
5.Add onion, garlic, thyme, oregano, majoriam (italian seasoning works well too) and any vegetables you want to this mixture. Keep stirring.
6.Add water to make the sauce and add the meat.
You might have to add additional water to keep the mixture from sticking and you definitely need to stir occasionally unless you use a crock pot.
If you are a fan of chicken wings, after step 4 add wings to the curry mixture and fry the wings with no additional water until they are done. This is called dry curry and boy are they good!
