...here's a recipe for my famous almost healthy fried okra. enjoy before the good fresh veggies are gone for the winter! -

Subject: My famous roast corn
6 ears corn
6 cups water
2 T coconut oil
3 chopped scallions
3 smashed garlic cloves
1 t salt
1/2 t black pepper
1 chopped scotch bonnet pepper seeds and all
1/2 t dry thyme or several sprigs fresh
7 allspice berries
put all but corn to boil in a pot and simmer a few minutes. meanwhile shuck the corn. soak corn several hours or even better overnight then grill til it starts to turn a little brown and black. people beg me to make this corn. -
Vegetarian Collard Greens
2 lbs collard greens
4 cups water
1 chopped onion
3 cloves chopped garlic
2 T oil or butter
1 T brown sugar
1T molasses
1 T liquid smoke
1 T vinegar
1 T red pepper flakes or hot sauce
rinse the greens real well and pull alll the greens off the stems and chop them. saute onion and garlic then fold in greens and toss so they are all coated with onion/garlic/oil and start to turn bright and shrink up. Add water and seasonings and bring to a boil. Cover and cook at medium for an hour or longer. Turn off heat and let them sit 10 minutes before taking lid off. -
Stewed Salt Fish with Dumplings,Spicy Plantains & Breadfruit recipe
Ingredients
For the Stewed saltfish
1 lb saltfish
1 green pepper diced
1 lb tomatoes chopped
5 cloves chopped garlic
4 tbsp vegetable oil
2 tbsp margarine
6 scallions finely chopped
2 tbsp parsley chopped
1 small onion
salt & pepper to taste
For the Spicy Plantains
3 medium sized plantains(peeled & chopped into 1/2 pieces)
2 tbsp fresh ginger peeled & grated
1 small onion grated
1/4 tsp salt
1/4 tsp hot sauce or finely chopped pepper
fry oil
For the Coconut Dumplings
1/2 cup grated coconut
1 1/2 cups flour
1/4 tsp salt
1 tbsp oil
1 tbsp margarine
1/2 cup of water
For the Seasoned Breadfruit
3 cups full breadfruit chopped into 1" pieces
2 tbsp oil
1 tbsp unsalted butter or margarine
1/2 cup red pepper diced
1 medium onion chopped
4 garlic cloves crushed
2 tbsp fresh parsley chopped
1 tbsp fresh thyme leaves
1/2 cup chicken broth or 1 cube dissolved in 1/2 cup water
1/4 tsp salt
1/4 tsp freshly ground pepper
Instructions
Stewed Saltfish Prep
1. Soak saltfish overnight then boil in fresh water until tender
2. Drain fish, remove bones, scales & flakes
3. Heat oil in a large heavy pan. Add pepper, scallions, onion & garlic. Cover and cook over low heat for 5 minutes, stirring occasionally. Add tomatoes and simmer over moderate heat for 2 to 3 minutes. Add saltish, margarine, salt and pepper.Cover the stew and simmer over low heat for 5 minutes
4.Arrange the saltfish on a plate. Sprinkle with parsley and serve with dumplings, breadfruit & spicy plantains
Spicy Plantains Prep
Combine all ingredients in a bowl. Toss until mixed. Fry in batches until golden brown and cooked. remove and drain on paper towels. Serve alondside saltfish,dumplings and breadfruit.
Coconut Dumplings Prep
Place flour, coconut, salt, margarine and oil in a bowl. Gradually stir in water to make a stiff dough.Turn onto a lightly floured board and knead for about 2 minutes. Make dumplings in desired shape. Slide dumplings into boiling water. Cover and cook for about 10 to 15 minutes.
Seasoned Breadfruit Prep
Melt butter or margarine in a heavy pan over medium heat then add oil. Add onions and cook 5 to 8 minutes until golden, stir often. Add garlic, thyme, red pepper and parsley, saute for 30 seconds. Remove from heat and add breadfruit with chicken broth or other prepared liquid. Toss gently to blend and heat through. Season to taste with salt & pepper. Serve with dumplings, saltfish and spicy plantains.
You can prepare any of these side dishes and combine it with any other of your favorites. -
I am totally stealing your saltfish recipe. But I can't help but feel like the collards would be better with a hambone, or a smoked turkey wing in there.

I don't eat birds or meat so I came up with my own veggie version. Even the most die hard meat eaters swear it tastes as good though.
