Chilean Sea Bass is another name for the Patagonian Tooth Fish, a fish that is being hunted to extinction. I would actively discourage anyone from ordering it in a restaurant or buying it in a fishmongers.

I know Convivium does a broiled whole sea bass. It's very good and moist, but because it's broiled not grilled the skin is soggy (and I prefer it crispy).
