Pasta recipes? Ramen?

I want to make pasta tonight. Either something italian (but not boring red sauce) or maybe an asian inspired pasta dish. Only thing is I don't have that much grocery money. So ingredients need to be readily available at the local grocery (not Whole Food-ish) and not high end.

Any ideas? I'm a great cook, just need some inspiration.

(Oh, and what's your favorite brand of pasta?)

  • During the summer when tomatoes are ripe, I love making Summer Tomato Pasta. Its easy:

    1/2 pound ripe plum tomatoes, roughly chopped/quartered
    1 box of penne (I like the whole wheat kind)
    1 bunch of fresh basil, roughly chopped
    10 oz. fresh mozzarella
    olive oil
    balsamic vinegar
    lemon zest

    Cook the pasta. Once its cooked, toss in the tomatoes, basil, mozzarella, and lemon zest. Add olive oil and balsamic vinegar (I like a lot of balsamic vinegar in mine).

    As you can see, I'm not really one for exact measurements, I usually just add a little bit of olive oil and a lot of balsamic vinegar, but you can adjust that to your own taste.

    This can be served hot or cold and tastes just as delicious the next day.

    Not sure if that's what you had in mind, but its all easy to find ingredients.

  • if i am pressed for time and cannot make my own sauce from scratch, i'll doctor "boring red sauce". i'll usually brown 1-lb of meat (ground turkey is what we use here, but anything will work) with garlic and onion. i'll throw in chopped bell pepper, zucchini, spinach, whatever good veg is on sale and on hand (if nothing is around, at the very least i'll put in a box of frozen spinach), some red wine (not cooking wine, whatever drinking wine i have open), and a jar of sauce. i like to season it with basil and oregano, but since hubby likes thing spicy i add red pepper, too. grate some cheese (i like pecorino romano) into it. simmer for a bit, and viola! a tasty sauce. this can be completed in the time it takes to boil the water and cook the pasta.
  • When I was a college student, when I could splurge I would create a wonderful ramen noodle based dish for quick energy and/or weed munchies. Boil three packs of ramen noodles with supplied packaged broth, drain then toss with a 1/2 stick of butter (cheap margarine if it's bill paying time) and straight out of the jar, room temp Aunt Millie's (your favorite flavor) sauce. Pair it with a Coke or a Boones Farm Triple Berry mixed with seltzer and you're stylin' my friend.
  • what a coincidence! eating a very similar incarnation of this right now for lunch. it's my go-to pasta dish but w/o the balsamic or lemon zest, and i cook the tomatoes a little with some garlic until they get stewy. i'll have to try it your way.
