Knife sharpening? — Brooklynian

Knife sharpening?

I know there have been mentions of wandering knife sharpening vans. Does anyone know of a store that will do this? The large hardware place on Washington, and Daffodil Hardware on Vanderbilt both said no. I just want to get my chef's knife sharpened. I don't have to do it very often, so I'd rather not buy a whetstone/sharpening steel.

  • Tarzanian on 7th ave and 2nd used to sharpen knives. 'Not sure if they still do.... They did do a good job on mine though....
  • I have one of those sharpening thingys but I'd probably cut my fingers off if I tried to use it. not sure if carrying all of my knives around is a good idea, though. especially to the slope or manhattan. I might stab the shit out of someone.

    Yeah, I've got it taped up in a bunch of cardboard, so that when I go to get it sharpened, I don't get the undivided attention of the Finest...
  • Sharpening steels are so worth it... I usually just give my knives a quick couple of swipes every 2nd or 3rd time that I use 'em... but I'm obsessive about my cookin' stuff...

    That's actually a honing steel. It doesn't sharpen, it puts the edge of the blade back into alignment. Sharpening actually puts a new edge on blades. If you use a honing steel (which you should use every time you use the knife) it will make the edge stay longer, but you'll eventually need to sharpen the blade.

    I sharpen my knives on my own using a ceramic wheel set for some and a whetstone for the others. It's something you can learn to do if you're interested.

  • the stone is only like $5... and the knife is sharpened in less then 5 minutes. got mine at the hardware store on washington and they explained how to do it, too!

    Be careful. If you don't know how to sharpen your knives, you can really mess up the edge, especially with a cheap stone (because they tend to be coarser). You can get a decent chef's sharpening stone at a place like Broadway Panhandler for $30 or so, but they can go up to about $200 for extremely fine-grain Japanese ceramic or diamond sharpening stones at a place like Korin (although Korin also carries less expensive ones).

    Don't want to lay out the big bucks for a ceramic honing rod? Don't have a honing steel?

    If you have ceramic plates with an unglazed rim on the bottom that will work too. It's not a pretty, and if you have some sort of ninja blade or something it may not put back a shaving edge, but it does the trick.

    Anyone can learn to sharpen their own knives, it just takes a little time to learn.

    Try Sur La Table on Spring street and Broadway. They sharpen while you wait and I think its 50 cent an inch

    hrm. maybe I'll check it out. the worst that can happen is that I'll have to take some time off work.
