I was just acting like Terry's secretary trying to get her poem out there to you all. And of course, doing anything to avoid what I am supposed to be doing. Uggghhhh... Packing. When my husband comes back, I'll stand in front of a box and pretend I was packing all this time...
and Hi Christina -- a big hug and love to you too! (Sent you a quickie email last night.) Glad to see you are redecorating and preparing for the T-day. Sorry, no solution for your turkey gravy dilema (I'll check w/Frank when he's back; he's the chef here.) I would have suggested making a little baby turkey - oh no - baby's too cute. I won't eat cornish hens anymore because they remind me of my yorkies. Yes, I am a sick
person - I have never denied it. And I don't think Franco-American exists in our vocabulary... xxxoooxxx

I remember my 1st year cooking for Thanksgiving ....my daughter was a month old.....I was so excited ...yeah Im gonna stuff the turkey ....!!!
When it came to washing out the turkey and pulling the neck out ...made me nautious ....but when I started to stuff it ...I got really sick .....and Ive never put stuffing in my Turkey since that day !!!! LOL -

Suzie - my husband makes stuffing balls... His mother's recipe.
And then he makes balls :oops: like meatballs; bakes them. Delicious!
I never heard of had these balls until I met him... Makes extras that we freeze. Still good months later.
Christina - if you are still there - Frank gave me a suggestion for you - starting with Turkey stock (like College Inn) and making a rioux (sp?)... (flower, butter, etc) Doctoring that up with celery, seasoning, etc... (not my thing, he's just telling me in the background -you can call me if you want). He said it is not as good as the real one; but the next best thing... I'm sure whatever you do will be great! -
