Cucumber Salad Recipe Needed

I want a simple cucumber salad. I can't remember if I used to use cider or white vinegar....or what else I put in it. HALP!

  • I like using soy, white/rice/cider vinegar, sesame oil, black pepper, cayenne, sugar.

  • I like the cucumber with yogurt, garlic and dill combo.
  • Thats almost tzatziki - the yogurt, cucumber, dill and vinegar - - only thing missing is the garlic.

    I also do a tomato, cucumber, red onion with black olives in a red wine/virgin olive oil dressing. Options: fresh mozzarella and/or chi chi's.

  • How about this: (This is what I use and it's simple & delicious!)

    Ingredients:

    2 tablespoons white vinegar
    1 tablespoon chopped fresh parsley
    1 tablespoon chopped fresh dill
    1 teaspoon minced garlic
    1 tablespoon white sugar
    1 teaspoon salt
    1 seedless cucumber, peeled and chopped

    Directions

    Whisk together the vinegar, parsley, dill, garlic, sugar, and salt in a bowl; add the cucumber and stir to coat. Cover and chill in refrigerator 4 to 8 hours. Stir well before serving.

  • I don't get the sugar part either. But here's my recipe.

    Cucumber, cherry tomatoes (sliced in half or wedges -you can substitute any ripe tomato), fresh mint cut into ribbons, lime or lemon, salt, cayenne. Toss it all up and it's tangy, spicy and the mint add a whole other layer on freshness.

    You can also substitute any herb in there (cilantro or basil perhaps?)
