any decent korean, indian or ethiopian restaurant has amazing, flavorful veg items. of course, some of them need to have the minced pork removed ....

Zen Palate is good. They're in Manhattan on W. 46th and 9th. Other than that I like Mr Falafel. Tons of veggie dishes.

Generally, check out http://supervegan.com/ for their listings of vegan, vegetarian, and veggie-friendly places.
If you are looking for something fancy, try Hangawi at 12 E. 32nd in Manhattan and their tea house Franchia at 12 Park Ave (b/n 34 and 35th streets) - very nice vegan Korean with great ambiance.
Candle Cafe (mostly vegan, but serves non-vegan casein soy cheese) on the Upper East side (3rd Ave. and 73rdish st) is also nice.
Simpler and less expensive: Tiengarden - zen oriented vegan Chinese cuisine in the East Village - Allen b/n Rivington and Stanton - excellent and very clean tasting.
The best inexpensive joint with quick service and tasty food - Veggie Castle in Brooklyn, Church Ave. right off Flatbush (towards Bedford) - Caribbean cuisine, believe mostly vegan (except for honey) and excellent juices. -

are we talking in the neighborhood, or NYC in general?
if we're talking NYC in general, i would have recommended Heriloom in the LES, had they not closed, for food which is vegetarian without being made to imitate "meat." my highest recommendation would go to Red Bamboo in the West Village. there's always a wait, though, so show up with time to spare. they'll take your cel phone number so you can walk around the village while you wait, which is a nice touch.
on the Slope, i actually think the few veg selections at Hunan Delight on 6th and Union are fantastic. i miss the days of King Wok on Flatbush, where Sushi Tatsu is now, though. great take-out. -
Counter on 1st Ave in the East Village is pretty great too. ( http://events.nytimes.com/2005/02/09/dining/reviews/09unde.html?ex=1149998400&en=40655146f0f77023&ei=5070 ).
I've yet to find any really great places in Park Slope, but most restaurants seem to have a vegan or vegetarian option or two. -
