    They sell a decent version at Natural Land in the vegetable cooler. Or, you could try it at the new Korean restaurant at Vanderbilt and Pacific that OPENS TODAY! :D/ :D/ :D/

    Let's talk terms.
    Is it how much kimchi is consumed in a fixed period of time, or who can eat their fixed amount of kimchi in the shortest time period? Perhaps this should be discussed over dinner this evening . . .

    What time is dinner at the new Korean restaurant? We were going to have a little date at home (with home cooking), so I'll have to check things out with my SO . . .

    The rules of competitive eating contests generally seem to favor the "most-in-a-fixed-amount-of-time" scenario. You would also need to standardize what type of kimchi is to be eaten. Most people think of the napa cabbage version, but there's quite a variety:

    I've done a homebrew version with baby bok choy and a murderous amount of dried chiles.

    What do y'all think about rice consumption along with the kimchi?
    I propose a minimal small bowl of rice must be consumed.

    I'm only into the competitions where
    1. people enjoy the food
    2. nobody yaks

    Subject: Kimchi eating contest is a really bad idea

    I have never posted here, but I really felt I had to warn you guys to not have a kimchi eating contests. I love love love kimchi, so much so that I frequently have jars of it in my fridge that I buy in Little Korea. I have had to learn that I cannot eat as much as I want of it, your body can really only ingest small amounts of it. I have a cast iron stomach. Nothing makes me sick, except eating too much kimchi, and I am not saying after several jars in one sitting I get sick, if you eat a third of a jar of kimchi you will spend the rest of the night in the bathroom with a flaming asshole. I promise. It is a laxative and you will be very very unhappy if you eat too much of it.

    Welcome to the site!

    I've eaten a 16 oz jar of kimchi in one sitting and although what I like to call "afterburn" is a reality, it's not as dire as you're suggesting.
