Knife sharpening

Hey, I have seen a guy in a truck ringing a real loud bell for knife sharpening (in his truck!). Kind of like an ice cream truck, but different. Anyone know the schedule or anything? Thanks.

  • Check out Korin in the city for great Japanese sharpening stones. They give knife sharpening lessons too (free if you buy a knife there).
  • I moved from Manhattan and have seen the very same knife-sharpening truck—a vintage model with a green exterior and a real wood interior—in Brooklyn. It was in PS. And I hear he comes to PH. Let's hope he comes around: There's absolutely no way that a home setup can replicate the superb job they did to my Wusthof chef's knife. Unless you got a wet stone grinder in your basement.
    Apparently people have been disappointed with the knife sharpener in the red truck...

    Good tip, Carnivore. Korin is in downtown somewhere. Sometimes they have the resident sharpening master working in the store.

    I bought a Western-style Kiya knife there, but I sharpen it at home with a Japanese wet stone. Knowing what I know now about sharpening, I would never give my knives to any one of those trucks.

    I use a regular Wuesthoff sharpener for my less refined knives, which works perfect.

    Hey, I've seen the knife sharpening trucks and spent many hours online reading about them and other options. From what I've read I will never let the truck guys near my knives. I have several very nice cooking knives and I want them to last and I read far too many stories of the truck guys ruining knives to ever trust them.

    I have had great success at Cook's Companion on Atlantic. I took in my good knives and a few old, bad ones. Even the bad knives came back working pretty darn well. Plus, they were fast--they will do it while you wait.

    With a bunch of Thanksgiving cooking coming up and a few dull knives in the stable, I finally got off my ass and got down to Korin! What a great friggin' place!

    I bought a couple of stones and an instructional DVD that they made... 'cause I'll have to know how to sharpen the Japanese knife that I couldn't resist (the edges are different than that of 'western' knives). :D I needed a slicing knife anyway... or at least that's what I tell myself. Anywho, yeah, if: you like to cook, you think that better tools make a difference and you'll take proper care of your investment, you should check out Korin before you buy another knife.

  • I stopped in Broadway Panhandler last week (E 8th St near Broadway in Manhattan) and was surprised to learn that they sharpen knives as well. It's $4 per knife, while you wait.
  • Broadway Panhandler is a great store. I'd trust them with my knives if Mrs. C and I didn't sharpen them ourselves.
