Franklin Ave to get a Cheese Cave!
Franklin's transformation to a foody paradise is taking another step forward with the addition of the Crown Finish Caves in some underground "lagering tunnels" under the old Nassau Brewery. Check out the details in the article:

I've been down in the tunnels and caves, and they're pretty spectacular. A bit more info on the space:

Love the 'before' photo, clearly it needed modernizing but also lost all its character.I was hoping there'd be a retail storefront aspect to this, like Murray's but apparently not

Actually, those tunnels that look raw remain largely so. Only the cheese caves have white paint and smooth floors.

Where is the cheese cave located underground in relation to the Nassau Brewery redevelopment that was announced last week? Is it going to be affected by construction there?And why does Wedge not have their cheese?

Different building. It's in the old building that says Heinz, next to the subway tracks. They're completely separate. The tunnels down there are sealed off to the adjoining tunnels on the neighboring property. Cheese cave is safe.

This is my first post on Brooklynian (I've been a silent observer until now). I just want to lend some info about where else to get the cheese - the article you post above says it's sold in pricier stores like Whole Foods and Eataly, but I was very delighted to find cheese from the Crown Finish Caves is now also being sold at the Park Slope Food Coop (of course, members only, but much cheaper than anywhere else)! Hope this is exciting news for others, too!
