You need lots of beef. I like to use ground round and big chunks of chuck. Also, if you have any chorizo around, throw that shit in too.

I always add roasted peppers, gives it some smokiness.

My recipe varies, depending on what I have around. I like chopping fresh hot peppers into it, and occasionally some bell peppers. I've used chipotles, but I think that sometimes seems to overwhelm the other flavors. I haven't put in roasted peppers in the past, but it sounds like it would be good.

We're going to a SB party, so I'll be making meaty (mix of beef and hot italian sausage) chili, my wife will be making vegan chili (it's actually pretty good).

I like to add lots of different beans, pinto, kidney, garbanzo and some corn sometimes. Beans and chilies YUM! Top it with some mexican sour cream and cheddar cheese!

I like to add corn to my chili too. In the winter, I use frozen. But the best is to use fresh when it's in season- cut the kernels off into the chili, then scrape the "corn milk" off the cob in too. The natural cornstarch acts as a thickener.

I thought about making chili today too. I had made it for New Years and it was sooooo delish. But I think I'm going with nachos, guac, and salsa. Plus I'm making some chicken stew to have around next week when I get home half frozen from work.
No SB party, just the TV. Me and my papi chulo. Maybe I'll hit a bar...
